Classic Ice Pop with Strawberry and Raspberry Coulis

1. Rinse and hull the strawberries
2. Blend the strawberries and orange juice to make a coulis. Add the icing sugar.
3. Pour the 4 unflavoured Velours into a bowl.
4. Pour a little strawberry coulis into the bottom of some of the ice-pop (or other) moulds, then add the Velours, then more coulis. In the others, pour a little Velours and add whole fruit as desired.
5. Place in the fridge. After half an hour, insert ice lolly sticks halfway into the ice-pops, then freeze.

Tips and tricks: You can make other sorts of coulis, or use other fresh fruit such as peaches, blueberries or apricots depending on the season.

Lemon Cheesecake

Mix the flour, baking powder and salt. In a stand mixer, whip the egg yolk with the sugar. While stirring, incorporate the flour, Sojasun Cuisine and the matcha tea.
You will end up with a soft dough. Roll into a ball, cover with film and leave to rest in the fridge for at least an hour.
Preheat the oven to 160°C (gas mark 5).
Flour your work surface and roll the dough out to ½ cm thick. Cut out a disc to fit your removable based cake tin.
Line the tin, taking care to cover the edges.
Bake for 20 minutes and leave to cool.
Soak the gelatine in cold water.
Pour the lemon desserts into a thick-based saucepan and heat without bringing to the boil. Incorporate the well-squeezed gelatine or agar-agar.
Leave to cool a little.
Pour the lemon filling onto the biscuit base and leave to set for two hours.
Unmould the cheesecake and sprinkle with pistachio pieces.

Mini Apricot and Mango Floating Islands

Cut the goat’s cheese into quarters, put each piece in a small, dariole-style mould and tamp down well. Reserve in the fridge.
Whisk the Sojasun Apricot and Guava dessert with the Sojasun Cuisine, and spoon into the bottom of 4 small soup dishes.
Unmould the goat’s cheeses into the centre of each plate.
Make a caramel with the sugar and pour onto the mini floating islands
Decorate with caramelized popcorn
